3 eggs
1 c. oil
2 c. sugar
3 tsp vanilla
3 c. flour
1 tsp salt
1/2 tsp baking powder
1 tsp baking soda
3/4 tsp nutmeg
3 tsp cinnamon
2 c. peeled, chopped apples
1 c. chopped walnuts

Directions:
Directions:
In large bowl, beat eggs; add oil, sugar, and vanilla and beat until fluffy. Add dry ingredients, mixing well. Add apples and nuts; stir until evenly mixed.

Place mixture in greased and floured bundt pan. Bake at 300F for 45 minutes. Increase heat to 325F and bake 20 minutes longer. Let cool 15 minutes, then remove from pan.

This cake gains flavor and moisture as it ages. Wrap and store at room temperature 3-5 days.
