1 pound carrots, cut into 2-inch julienne strips
3 garlic cloves, minced
1 T. olive oil
salt and pepper to taste
1 T. butter or margarine
2 T. minced chives or green onions

Directions:
Directions:
In a large skillet, sauté the carrots, garlic, salt and pepper in oil and butter for 3 minutes. Reduce heat; cover and cook for 10 minutes or until carrots are crisp-tender. Sprinkle with chives. Serve immediately.
