1/2 c. carrot, finely chopped
1/2 c. onion, finely chopped
1/4 c. celery, finely chopped
2 Tbs. butter
1/4 c. flour
1 c. chicken broth
1/4 tsp. salt
2 c. light cream or milk
8 oz. American cheese, cubed

Directions:
Directions:
In large pot, cook carrot, onion, celery in butter on low heat until tender. Stir in flour to make a paste, then add broth and salt. Bring to a slow boil and cook until thickened and bubbly, stirring frequently. Stir in milk and cheese. Continue to stir frequently over medium-low heat until the cheese has melted. Do not boil.
