1/2 tsp. ground cloves
1 1/2 tsp. celery seed
1 1/2 cinnamon stick, broken into pieces
1 c. sugar
1 c. vinegar
1 c. water
1/2 tsp. salt
10 small beets

Directions:
Directions:
Put cloves, celery seed and cinnamon stick pieces in a tea ball. Set aside. In a medium saucepan, boil sugar, vinegar, water and salt until sugar dissolves. Add tea ball of spices and steep on low heat for 45 minutes, while preparing beets.

Wash beets and trim stem and root. Cook covered in boiling salted water 35 - 45 minutes, until soft. Drain and peel when cool to the touch. (Skins should peel off with a paper towel.) Slice beets into a bowl. Remove and discard tea ball from steeping sugar/cinnamon mixture. Pour over sliced beets until covered with sauce. Seal bowl with lid or plastic wrap and refrigerate. This keeps several days in the refrigerator.
