6 lbs. cooked yams
2 1/2 lbs. Roman Beauty apples
1 c. sugar
3 T. cornstarch
1 tsp. salt
2 c. hot water
1/4 lb. butter
1 tsp. cinnamon
1 tsp. nutmeg

Directions:
Directions:
Arrange in a flat 10x15 casserole dish, a layer of sliced cooked yams, then top with a layer of sliced, peeled apples. Combine remaining ingredients to make a sauce. Cook sauce until thickened. Pour over yams and apples; cook covered in 350º oven for 35 minutes. Make sure the apples are completely cooked. Remove cover last few minutes if casserole is too think.
