1 c. lentils
1/4 c. olive oil
2 medium onions, chopped
2 garlic cloves, minced
8 c. chicken broth
salt and pepper to taste
1 tsp. cumin
1 T. lemon juice

Directions:
Directions:
Rinse lentils several times; set aside to drain. Heat olive oil in large saucepan. Add onions and garlic. Saute until onions are tender. Add drained lentils, broth, salt and pepper. Bring to a boil. Reduce heat and cover. Simmer over low heat about 1 hour or until lentils are tender and broth is slightly thickened. Serve as is, or puree in blender or food processor. Add lemon juice just before serving.
