2 c. all purpose flour
1/2 tsp. ground mace or grated nutmeg
1 c. unsalted butter
1 c. creamed cottage cheese
1-2 T. ice water (optional)
additional flour for rolling out dough

APPLE FILLING:
1/4 c. butter
4 med. tart apples, peeled, thinly sliced
1/2 c. sugar
1/2 tsp. cinnamon

GLAZE:
1 egg beaten w/ 2 T. milk
sugar for sprinkling

Combine flour and mace in large bowl. Cut in butter. Blend in cottage cheese. Form into a ball and if too dry add 1-2 T. ice water. Turn out onto lightly floured pastry cloth. Roll in to 16 inch circle. Fold top third over center third and bottom third over top. Pound to flatten, then roll out until almost double in length and width. Fold into thirds, then fold in uneven edges. Wrap in plastic and refrigerate 30-60 minutes.

FILLING:
Melt butter in large skillet. Add apples and saute till crisp tender (5 min). Sprinkle with sugar. Cool completely. Mix in cinnamon.

PREHEAT OVEN to 375 º. Lightly grease baking sheets. Roll dough out on pastry cloth into 16 inch square. Cut into (16) 4 inch squares. Spoon filling into centers of squares. Fold two opposite corners of each square over filling and press in center to seal. Brush with glaze and sprinkle with sugar. Bake for 20 minutes.

My friend Kimberly Costa served these and after one bite, I knew that I wanted this recipe.This is a holiday favorite for breakfast, especially as part of a fireside breakfast while watching the Thanksgiving Day Parade. The cottage cheese in the crust makes these pastries unbelievably tender. Just follow the recipe - they're not hard to make and they are so good.Can be made a day ahead and reheated.
