Notes: My friend Kimberly Costa served these and after one bite, I knew that I wanted this recipe. This is a holiday favorite for breakfast, especially as part of a fireside breakfast while watching the Thanksgiving Day Parade. The cottage cheese in the crust makes these pastries unbelievably tender. Just follow the recipe - they're not hard to make and they are so good. Can be made a day ahead and reheated.
