1 1/2 Cups Splenda
1 Cup Yogurt or Non Fat Sour Cream
2 Eggs
2 1/2 Cups Bananas, Mashed
2 2/3 Cups AP Flour
2 tsp. Baking Powder
1 tsp, Baking Soda
1/2 Cups Canola Oil
1/4 tsp. Salt
4 tsp. Vanilla
1/2 Cup Walnuts, Chopped (Optional)

Directions:
Directions:
Preheat Oven to 325. Spray 9 X 5" loaf pan or muffin tins with pan spray. Set aside.

In large bowl, combine Splenda, oil, and eggs. Mix well using a wire whisk. Add yogurt. Stir soda in mashed bananas and add to egg/oil mixture. Mix salt, baking powder and flour. Add to egg mixture. Mix well. Stir in Walnuts.

Evenly spread batter into prepared pans.

Bake loaf 40 - 50 minutes. Bake muffins 25-30 minutes. Test with toothpick. Let set in pan 10 minutes, then remove from pan.
