Pudding
- 3 cups - carrots - grated
- 3 cups - potatoes - grated
- 1 1/2 cups - granulated sugar
- 2 1/4 cups - all purpose flour
- 12 cups - mixed dried fruit - raisins, cherries, peel, pineapple, etc
- 3 tsp - baking soda
- 3 tsp - salt
- 3 tsp - nutmeg
- 3 tsp - cinnamon
- 9 oz - butter - melted

Hard Sauce- when ready to serve the pudding
- 1/3 cup - butter
- 1 cup - icing sugar
- 2 - 3 tsp - almond extract, or rum

Pudding
- mix all ingredients together
- pack into sterilized quart sealers ( 1/2 full)
- steam for about 3 hours

- for serving - steam lightly again until warm, or heat in microwave safe bowl covered, stirring to make sure it doesn't dry out.

Hard Sauce
- whip together
- place in decorative serving dish, decorate with cherries
- serve with heated pudding
