4 medium potatoes
2 T. butter
1/2 tsp. salt
1/4 c. milk
1 tsp chopped onion or chives
1 cup cottage cheese

Directions:
Directions:
For 6 servings, bake 4 medium potatoes in moderately hot oven (400) about hour. Cut into halves lengthwise and scoop out pulp. ave 6 potato shells. Mash, and add butter, salt, milk and onion or chives. Whip until light and fluffy. Stir in cottage cheese. Spoon potato mixture back nto shells. Garnish with pimento. Bake in ht oven (400) 10-12 minutes.
