2 cans black-eyed peas
1/2 c. bell pepper, chopped
5 sm. stalks celery, chopped
1 med. onion, chopped
2-1/2 tsp. chopped pimentos
Salt and pepper to taste
2/3 c. canola oil
3 tbsp. vinegar
1-1/2 tsp. prepared mustard

Mix all ingredients in bowl. Cover and chill in refrigerator for several hours before serving.
