1 3/4 c plus 2 T sifted cake flour
1 1/4 c sugar
1 tsp double-action baking powder
1 tsp soda
3/4 salt
1/2 c crisco
1/2 c buttermilk
1 c mashed bananas (2)
2 eggs
1 1/2 tsp vanilla
Directions:
Directions:
Sift together in bowl: flour, sugar, baking powder soda and salt. Add 1/2 c crisco, 1/4 c buttermilk and 1 c MASHED bananas. Beat vigorously for 2 minutes on medium speed. Add 1/4 c buttermilk, 2 eggs (unbeaten) and 1 1/2 tsp vanilla. Beat 2 minutes on medium speed. Pour into greased and floured muffin tins (1/2 full) (I use cupcake papers). Bake at 350º for 20 - 25 minutes
