4 medium sweet potatoes 1 T. olive oil 1/4 t. salt and pepper (each) Vegetable cooking spray 1 T. fresh parsley, finely chopped 1 t. orange rind, grated 1 small clove of garlic, minced
Peel and slice sweet potatoes like French fries. Toss with remaining ingredients. Spray cookie pan with cooking spray and spread the sweet potatoes out on the pan. Bake at 350º for about 20 minutes. Test for doneness.
