2 lbs Round Steak or other Inexpensive Steak
1 cup Flour
2 tbsp Olive Oil
2 tbsp Vegetable Oil
2 medium Green Peppers, sliced
2 medium Onions, slice lengthwise
1 stalk Celery, sliced
1 cup Beef stock or Broth
Salt to taste
Freshly Ground Pepper to taste

Pound the steak with a tenderizing mallet. Turn and pound the other side. Cut the steak into strips, dredge in flour, and fry in the olive oil and vegetable oil mixed together. Remove the steak and set aside. Add the vegetables and saute for 5 minutes. Remove and set aside. Add 1/2 cup of flour and the beef stock. Brown slowly, scraping the bottom of the pan, until the gravy has begun to thicken. Return the steak to the pan and cover with the vegetables. Season with salt and pepper. Cover and simmer over a low flame for 30 minutes, watching that it does not thicken too much. Serve over rice, noodles or mashed potatoes. Serves 4.
