1/2 cup corn oil
2 cups sugar
2 t. vanilla
2 cups flour
1 cup confectioners sugar
4 squares unsweetened chocolate, melted
4 eggs
1/2 t. salt
2 t. baking powder

Directions:
Directions:
Mix corn oil, chocolate and sugar. Blend in one egg at a time until well mixed. Add vanilla, and stir in salt, flour and baking powder. Chill several hours, or overnight. Heat oven to 350º. Drop teaspoonfuls of dough into confectioners sugar, roll around and shape into a ball. Place 2 inches apart on a greased baking sheet. Bake 10 to 12 minutes. Makes about 50 cookies. These freeze very well and are even more moist after freezing.

Be careful you don't overbake these cookies or they will be dry. They are best if you keep them in the freezer and just take out a few at a time. My family loves them but it's important not to let them get overbaked or dry.
