1 T. olive oil
1 small onion, chopped
2 cups cooked chicken, cut up (about 1 large or 2 small breasts)
1 can diced tomatoes with jalapeņo peppers
1 can (10.5 oz.) each garbanzo beans (chick peas), black beans, kidney beans (or any combo of beans that you like) drained.
1 - 14 oz. can chicken broth
1/4 tsp. salt
pepper
Hot sauce or salsa to taste

In a soup pan, saute onion in olive oil until soft. Add entire can of tomatoes, beans, spices, cooked chicken, mushrooms and spinach. Stir and bring to a boil, then reduce heat and simmer for 15 - 20 minutes. (Maybe a little longer if spinach isn't broken up).

We also add fresh mushrooms and a box or half a bag of frozen spinach.
