3 eggs 1 cup oil 2 cup grated zucchini 1 3/4 cups sugar 1 t. vanilla 1 T. orange peel, grated 3 cups flour 1 t. soda 2 t. cinnamon 1/2 cup coconut 1 t. salt 1/2 t. baking powder 1/2 cup nuts 4 ounce jar maraschino cherries, drained and chopped
Mix together and pour into two bread pans that have been greased and floured. Bake 50-60 minutes at 325º.
