Grandpa Mullin's Spaghetti Recipe

1 lb. Lean Bacon (Sliced)
1 Clove of Garlic (Sliced or Chopped)
1 lg. Yellow or Sweet Onion (Chopped)
2 Green Peppers (Chopped)
1 pt. Fresh Mushrooms (Sliced)
2 cans Stewed or Diced Tomatoes
1 16-20oz can Tomato Puree
Basil and Parsley Flakes

Slice bacon in 1/2" strips (opposite existing slice pattern). Separate and Fry to crisp in a 4-6 quart Saucepan(Do Not Drain off Grease). Add garlic as desired, Grandpa liked a lot of Garlic. Add the onions and green peppers. OMG, I can smell it now. Add the Stewed Tomatoes and Tomato Puree. Stir. Season to taste with Basil and Parsley. Bring to a boil, lower heat to simmer for about 45 minutes (until onions and peppers are cooked but not mushy). Stir in mushrooms and simmer for about 5-10mins longer. Serve over Angel Hair Spaghetti. I promise you will love this!!!

This Recipe is dedicated to the memory of my Grandpa James Mullin. Grandpa was impacted by both Heart Disease and Cancer in his Lifetime. While in his 40's Grandpa suffered a Stroke that left him partially paralyzed in his left side. Through a lot of therapy and love he overcame this obstacles to then fight once again for his life from Lung Cancer. Grandpa loved to Cook, to Visit, and to Fish. He is sorely missed by all of his Children and Grand's. I know this recipe may seem a little strange with Bacon vs. Hamburger, but I promise that once you've tried it this way you will never eat "normal" Spaghetti again.
