Shrimp Quesadillas Recipe

3 qt water
1 T Old Bay seasoning
2 tsp chili powder
1 pound medium shrimp
1 (10-oz) can diced tomatoes w/green chilis, drained
1 cup shredded Monterey Jack cheese w/peppers
4 10-inch flour tortilla
1/4 cup butter, divided
garnish: shredded lettuce, sour cream, lemon wedges

Directions:

Bring water,.Old Bay seasoning and chili powder to a boil over high heat. Add shrimp, cook for 3 minutes or until pink and firm. Drain and rinse with cold water, peel shrimp. Coarsely chop shrimp by hand or with food processor. Spoon into large bowl, add tomatoes and cheeses, stirring to combine. Spoon shrimp mixture evenly over half of each tortilla; fold each in half. In a large skillet, melt 1 T butter over medium heat. Add 1 quesadilla; cook for 4-5 min per side or until it is crisp. Repeat with remaining butter and quesadillas. Cut each one into 4 wedges to serve. Pizza cutter works well to cut. Garnish with lettuce, sour cream, etc., if desired.
