2 med. zucchini
water
1 egg beaten
4 oz mild cheddar
6 saltines crushed
salt and pepper to taste
2 t Parmesan cheese
4 pieces of cooked bacon crumbled

Directions:
Directions:
In saucepan add zucchini to boiling water at high heat for about 5 minutes. ( fork tender ) Remove rinse with cold water. Preheat oven to 350 degrees. Cut Zucchini in half lengthwise and scoop out pulp, reserving shells. Finely chop pulp and put in small bowl. Add eggs, cheddar cheese cracker crumbs, salt, pepper and mix well. spoon mixture evenly over zucchini place in baking pan. Sprinkle with Parmesan cheese and bacon. bake until cheese is melted and slightly brown. 15 to 20 minutes.
