Ingredients: 4 center cut pork chops at least 1/2 inch thick 1 green bell pepper 1 white onion 5 crimini mushrooms 1 can of diced red peppers 1 pint of heavy cream Minor's © chicken base Salt, garlic and black pepper to taste Flour and butter to make thickening agent Toothpicks

Directions:Dice all vegetables add to mixing bowl with 3 cups of shredded cheese, mix Preheat oven to 350 degrees Using a tenderizing mallet, pound out the pork chops until about 1/4 inch thick. place vegetable and cheese mixture in middle of flattened pork chop. Roll one side of the pork chop over and close with toothpicks. Season outside of rolled pork chops. Place in 1 inch deep pan. Add a little water with a tbsp. of vegetable oil. Bake until middle is melted and at least 155 degrees. Red Pepper Sauce:Mix melted butter with flour to make a creamy but thick rue. Bring cream to a boil. while hot add chicken base and taste cream for desired saltyness. Using a blender, puree diced red peppers and add to cream. Once cream begins to boil use a wisk to whip in rue. the more added the thicker it will get as it cools. If sauce is too thick, simply add water. If desired add more spice to sauce. Serve stuffed pork chops with sauce on them. |
