1 small zucchini, sliced lengthwise
1 cup sliced mushrooms
1 green, red or yellow pepper, sliced into strips
1 T. reduced fat mayonnaise
1/2 T. oregano
1 garlic clove, peeled and chopped
1 8" prebaked pizza crust or focaccia shell
4 slices provolone cheese

Preheat the broiler. Arrange the vegetables in a single layer on a baking sheet and spray with nonstick spray. Broil until well browned, about 9 minutes. Remove and set the vegetables aside. Reduce the oven temperature to 450º. Mix the mayonnaise, oregano and garlic together and spread on 1/2 of the bread. Layer the vegetables and cheese on top of that. Top with the other half of bread. Bake until the cheese melts and the sandwich is heated through, about 5 minutes. Cut into wedges and serve.
