3 lbs ground beef (chuck) or 2 lbs ground
beef with1 lb. ground veal
1/4 lb saltine crackers
1/2 cup milk
2 eggs
1 cup grated ltalian cheese
1 cup chopped ltalian parsley

Directions:
Directions:
Break up crackers into small pieces. Add
milk and let rest until all milk is absorbed.
In a large bowl, add all ingredients with
cracker mixture. With your hands mix all
together very well. Shape into ball about
size of tennis ball. Use these in Tomato
sauce for pasta. Drop into sauce, and let
simmer for at least 2 hours.
It is not necessary to pre-fry these when
making sauce. If not using these all at one time,
shaped balls can be frozen on a cookie sheet, and
later placed in a freezer bag.
