3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
2 tsp vanilla

Beat together above ingredients
Add
3 cups flour
1 t.salt
1 tsp. soda
3 tsp cinnamon
1/4 tsp baking powder
1/2 cup chopped nuts


MAKES 2-5X9 OR 3-31/2X71/2 LOAVES

TO FREEZE WRAP IN WAX PAPER AND THEN IN TIN FOIL
FREEZES VERY WELL!!

Preheat oven to 325º Bake one hour.

The first time I met MOM the summer of 1992 she served us this bread at her house in OK and I loved it. It was so moist. She gave me the recipe and I make it often!
