Ingredients:  
1/4 c. chopped onion
crushed red pepper (to spice level tolerance)
2 T. butter
1 1/2 c. chopped plum tomatoes
8 large fresh basil leaves
salt and ground pepper, to taste
dried oregano
1/4 c. white wine
1 c. heavy whipping cream
1 lb. penne pasta cooked
1/4 c. grated Parmesan cheese

Directions:
Directions:
Saute onions and crushed red pepper (I use about 2 teaspoons) in butter.
Add tomatoes, basil, salt, pepper, and oregano and saute until butter browns.
Deglaze with white wine.
Add cream and cook over medium heat until mixture is reduced by half.
Add cooked pasta and cheese and toss.

I only use 3/4 lb pasta.
Serve with blackened fish and coleslaw.
