Potatoes 4-5 medium size
1/8 cup shredded onion
1/4 cup flour
1 egg
1/4 cup panko crumbs
salt

Directions:
Directions:
Shred raw potatoes add the next five ingredients. Heat skillet with canola oil - about 1/2 inch on bottom. Drop mixture into pan to make pancakes. Fry on both sides until crispy, brown and heated through.

Serve hot with applesauce!
