1 lbs ground beef
1 large onion, chopped
1/2 lb mushrooms, sliced
1 cup cooked rice
1 can diced tomatoes (14oz)

Directions:
Directions:
Saute onion and mushrooms with ground beef, until beef is browned and onions are translucent. Stir in diced tomatoes with their juice. Stir in cooked rice, and heat through.

This was a favorite of Dave's. Mom would make this for him when he came home from college, along with her "special" lemon pie, for desert.
