1 cup butter
1 egg
1 cup sugar
1 cup chopped pecans
1 tsp vanilla
1/4 tsp salt
1 cup cake meal
8 oz. semi sweet chocolate (I use choc chips)
preheat over 350 grease jelly roll pan - food process butter, egg, sugar, vanilla & salt. scrape sides often and add cake meal to bowl (1/2 at a time) and process. Dough will be stiff.
Spread evenly in pan and bake 20 minutes. Let cool and then spread melted chocolate on top and sprinkle pecans before chocolate hardens. Sometimes I sprinkle the chips on the pan right after they come out of the oven and they melt from the heat, but you have to be very gently spreading the chips on the hot dough. Cut into squares before chocolate hardens completely. Remove from pan with a small spatula after completely cooled to prevent them from falling apart.
