10 Eggs
2 c Sugar
1 c Matzo Cake Meal
c Potato Starch
c Orange or Lemon Juice
2 Lemon Rind
tsp Salt


Beat Egg Whites in very clean large bowl with 1 c sugar until they stand stiff.

In separate bowl, Blend egg yolks and 1 c sugar. Add oil.
Alternately add dry ingredients and juice into yolk mixture.
Fold into whites.

Bake in Angel Food-type cake pan at 350o for 1 hour-1 hour, 10 minutes.

Cool upside down until cool.
