8 steaks
4 oz butter
1 tb brown sugar
1 tb bourbon
1 tb whole grain mustard
16 oz heavy cream
1 ½ tsp lemon juice
1 cup walnuts
Salt and pepper to taste
Olive oil as needed


Directions:
Directions:

Pan sear steak in olive oil. Remove from pan. Deglaze pan with bourbon and lemon juice. Add brown sugar, heavy cram and whole grain mustard. Reduce until thick enough to coat spoon. Whisk in butter, walnuts and season to taste. Spoon sauce over medallions and serve.
