4 a 5 zapallitos italianos (zucchini) muy frescos, con piel y en rodajas de 4 mm.
4 huevos grandes
1 cebolla blanca picadita
2 cucharadas de aceite
6 cucharadas de mantequilla
2 dientes de ajo picaditos
4 cucharadas de harina
1 ¼ tazas o más de leche fresca
½ taza de queso parmesano rallado
sal, pimienta y nuez moscada

Calentar el aceite y una cucharada de mantequilla; sudar la cebolla y los ajos a fuego fuerte tapado con un poquito de sal. Cuando la cebolla esté transparente agregar los zapallitos, sazonarlos y saltear hasta que estén cocidos y ligeramente dorados. Reservar aparte.

En una cacerola echar 4 cucharadas de mantequilla y cuando se derrita, agregar el harina removiendo todo el tiempo, y luego a pocos echarle la leche caliente. Sazonar esta salsa blanca con sal, pimienta y nuez moscada. Retirar del fuego e incorporarle las yemas, la mitad del queso, los zapallitos cocidos y por último las claras batidas a nieve, mezclándolas suavemente.

Verter la preparación a un molde pyrex de 13” x 9” engrasado con la cucharada de mantequilla restante. Salpicar encima el resto del queso parmesano. Llevar al horno precalentado de 350º F a gratinar por unos 25 min. o más. Servir inmediatamente.
