2 lbs. Yams, pared and cut into 3/4" thick slices
1 lb. carrots, scraped and cut into 3/4" slices
1 cup diced apples
1 cup orange juice
2 Tbsp. honey
1 Tbsp. grated lemon rind
1/4 tsp. ground nutmeg
1/4 tsp. ginger

Directions:
Cook yams and carrots in 1" of simmering water in covered saucepan until barely tender, about 15 minutes. Drain.

Preheat oven to moderate (350)

Grease 2 1/2 quart casserole. Place yams and carrots in casserole, stir in apples.

Pour the orange juice over the vegetables and fruit. Dot with honey, sprinkle with lemon rind, nutmeg, and ginger.

Bake for 35 minutes or until fork tender, stirring gently once or twice.

Garnish with thin strips or orange rind, if you wish.
