1/4 c. flour
1/4 c. cormeal
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. pepper
2 egg whites
1/4 c. milk
4 flounder fillets (6 ounces each)
1 T. grated Parmesan cheese

Directions:
Directions:
In shallow bowl, combine flour, cornmeal, salt, paprika and pepper. In another shallow bowl, combine egg whites and milk. Dip fillets into milk mixture and then coat with cornmeal mixture. Place in a single layer on baking sheet coated with nonstick cooking spray. Sprinkle with Parmesan and bake at 425 F for 8-10 minutes or until fish flakes easily with fork.

Another from Light & Tasty. I usually use egg substitute instead of egg whites and have also made this with tilapia and cod.
