8 chicken thigh, boneless
2 T. olive oil
1 medium onion, sliced
1 T. paprika
1 tsp. salt
1/8 tsp. freshly ground pepper
1/2 c. sherry
3/4 c. tomato juice
1/2 c. water

Directions:
Directions:
Wash the chicken and pat dry. Heat the olive oil in a large skillet over medium high heat. Sauté chicken, a few pieces at a time, until lightly browned. Put chicken in one layer in an ovenproof serving dish, skin side up. Sauté sliced onion in same skillet until just limp. Add to skillet the paprika, salt, pepper, sherry, tomato juice and water. Bring quickly to a boil, scraping up any browned bits in the bottom of the skillet. Pour the skillet mixture over chicken. Bake, uncovered, at 400º F for 20 minutes. Turn and bake 30 minutes more. If desired, thicken with flour and water mixture. Serve with buttered, egg noodles.
