Nonstick cooking spray
1 C. firmly packed light brown sugar
3/4 C. soft tub margarine
2 large egg whites
2 tsp. vanilla extract
1 15 oz. can chickpeas, drained and rinsed
2 C. semisweet chocolate chips
2 C. all-purpose flour
1/2 C. old-fashion oats
1 tsp. baking soda
1/4 tsp. salt

Preheat oven to 350º. Spray cookie sheet. In large mixing bowl, beat sugar and margarine. Beat in the egg whites and vanilla. Add the chickpeas and chocolate chips. Add the flour, oats, baking soda, and salt. Mix on low speed until dough forms. Drop the dough by the tablespoonful onto the baking sheet. Press gently with a fork to flatten. Bake until the cookies are golden brown, 11-13 minutes. Transfer to a rack to cool. Store in airtight container.
