3 medium onions, sliced thin
1 tbsp. chopped pimento
2 cups grated cheddar cheese
1 small can water chestnuts, sliced thin & drained
1/2 tsp. paprika
1/4 cup mayonnaise
1/4 cup sour cream
1/4 cup melted butter
1 can cream of chicken soup, undiluted
3 eggs
1 small can sliced mushrooms, drained
3 cups Ritz crackers, crushed
(may use crushed potato chips also)

In greased casserole dish, arrange onions. Mix next 10 ingredients together & pour over onions.

Bake at 350 for 30-40 minutes.

Top with Ritz crackers or potato chips & dot with butter & bake until crumbs are brown.
