4-1/2 c. sliced zucchini (1/4-inch slices)
1/4 c. diced onion
1 T. olive oil
1-1/2 c. fresh or frozen corn, thawed
1/2 tsp. salt
1/4 tsp. ground cumin
1/8 tsp. pepper

Directions:
Directions:
In nonstick skillet, saute zucchini and onion in oil for 4-5 minutes. Stir in corn; saute 2 minutes longer or until vegetables are tender. Sprinkle with salt, pepper and cumin.

Light & Tasty again. If you aren't a fan of cumin, just leave it out or replace it with another spice like rosemary or thyme.
