2 tablespoons olive oil
1 medium onion chopped
1/2 red and yellow pepper chopped
3 tablespoons chopped hot chilies
8 ounces cream cheese (1/3 fat)
1/2 cup half and half
10 ounces frozen chopped spinach (thawed and drained)
2 cups Monterey jack cheese
2 1/2 ounce can sliced black olives
1 tablespoon red wine vinegar
salt to taste

Directions:
Directions:
Saute onions, peppers & chilies. Mix in rest of ingredients. Transfer to a lightly greased casserole dish.

Serve with tortilla chips. Makes a large batch, could divide and freeze.

Bake 400º for 25 minutes
