1/2 cup olive oil
2 bunches scallions, chopped
1/2 head garlic, sliced
1/8 cup fresh parsley
1/8 cup fresh basil
1 10 ounce bag fresh spinach
8 ounces sliced mushrooms
1 1/2 pounds large shrimp
salt and pepper to taste
1 pound cooked pasta
Parmesan cheese

Directions:
Directions:
Saute scallions and garlic in oil over medium heat until soft. Add parsley, basil and spinach, chopped. Cook about 1 minute. Add mushrooms cook about 2 minutes, and then add shrimp. Cook about 2-3 minutes until shrimp turn pink. Mix with pasta, and sprinkle with Parmesan cheese.
