Ingredients: 1 Pillsbury pie crust (15oz.) 1 pkg. cream cheese, softened 1 cup 2% milk 1 box (4serv.) vanilla instant pudding mix 1/2 cup frozen limeade concentrate, thawed 1 1/2 tsp. rum extract Topping: 1 1/2 cups heavy whipping cream 1/4 cup confectioners sugar 3/4-1 1/2 tsp. mint extract

Directions:Heat oven to 450º. Make pie crust as directed. Use 9" glass pie plate and bake 10-12 minutes. Cool completely. In large bowl, beat cream cheese with mixer on low until creamy. Add remaining filling ingredients and beat on low 30 seconds until blended. Beat on med speed for 2 minutes until thick and creamy. Spoon into pie crust. Refrigerate. Beat topping ingredients on medium until stiff peaks form. Spread over filling. Refrigerate 1 hour or until set. |
