4 to 6 boneless, skinless chicken breast halves
1 c. 1% buttermilk
1/2 c. reduced fat biscuit/baking mix
1/2 c. cornmeal
1-1/2 tsp. paprika
3/4 tsp. salt
3/4 tsp. poultry seasoning
1/2 tsp. garlic powder
1/2 tsp. pepper
1/4 tsp. cayenne pepper
6 onion or kaiser rolls

Pound chicken to 1/2-inch thickness - may have to cut larger breasts into 2 pieces to fit on buns. Pour buttermilk into large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate 8 hours or overnight.

In a shallow bowl, combine biscuit mix, cornmeal, paprika, salt, poultry seasoning, garlic powder, pepper and cayenne. Remove chicken one piece at a time, allowing excess buttermilk to drain off. Coat chicken with cornmeal mixture and place in 13x9x2-inch baking dish coated with nonstick cooking spray.

Bake, uncovered, at 400 F for 12 minutes. Turn chicken and bake an additional 8-12 minutes or until juices run clear and coating is lightly browned. Serve on rolls with lettuce and tomato.
