2 tablespoons vegetable oil
1 medium onion, sliced
1/4 cup sliced celery
4 pork chops, cut 1/2 inch thick
salt and pepper
1 1/2 cups water
2 tablespoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 8-ounce cans tomato sauce
1 cup white rice, uncooked

Directions:

Lightly saute onion and celery in oil. Sprinkle chops with salt and pepper; add to skillet and brown on both sides. Remove chops. Add water, brown sugar, salt, and pepper, and 1 1/2 cans tomato sauce. Stir and bring to boiling point. Add rice and stir. (There will be a lot of liquid, but rice will absorb it.) Return chops to skiller, cover, and simmer 30 minutes. Pour on remaining tomato sauce, cover, and cook 15 minutes longer.
