Pigs feet and ears
Lots of lemons
Salt to taste
Lots of cucumbers
Hot Peppers
Parsley
Onions
shallots

Directions:
Directions:
Thoroughly clean feet and ears
Boil in pot until tender
Wash off feet and ears
Overnight soak the feet and ears in lemon, salt and water.

In a bowl squeeze a lot of lemons.
Chop cucumber,peppers, onions and shallots & parsley into small pieces
add salt to taste. Combine with lemon and refrigerate.

The following day pour off feet and ears.
Pour ingredients in bowl on top of feet and ears. Add more if needed.

Use parley to garnish.

Note: There should be enough liquid in bowl to cover feet.

This is eaten with sweet potato pudding and sometime potato salad.
