Dry salted codfish
Thyme
Hot peppers
Onions
Scallions
Shallots(optional)
Parsley
Celery (optional)
Garlic (optional)
Egg
Milk
Flour
Baking powder
Frying oil

Directions:
Directions:
Soak or boil codfish to reduce salt
Finely mince codfish with fingers or fork
Finely chop seasonings
Add all seasoning
Add milk, egg and a little oil (I use olive or Soya bean)
Add flour and baking powder to consistency desired
Mix well
Pour oil into pan and make sure oil is hot before putting batter in.
Drop one rounded teaspoon of batter into the pan; making sure that there is enough oil to cover the fish cake. Taste your product prior to frying the entire batter. This way you can add more stuff to the batter, if desired.
If happy with your batter fry your fish cakes. (If you prefer larger fish cakes,” go for it”).
