Blueberry Muffins Recipe

1/4 c. soft marg.
1/2 c. sugar
1 egg
3/4 c. milk
1/4 tsp. vanilla
1 3/4 c. + 1 T. flour divded
2 1/2 tsp. baking powder
1/2 salt
1 c. blueberries.

1. Cream marg. and sugar together until light and fluffy. Add egg, beat until nearly smooth.

2. In small bowl stir together flour, baking powder, salt. Add this to the creamed mixture. Stir just until moistened -- batter will be lumpy.

3. Toss berries with remaining T. flour ( and kind of berries, fresh or frozen).Spoon into muffin tins. Place in preheated oven (425). Bake for 25 min. or until golden brown.
