6-8 big potatoes, cubed and cooked in salt water
1 bell pepper, chopped fine
1 onion, chopped fine
1 can Rotel tomatoes, cut fine
1 (4oz) can mushrooms, chopped fine
1 lb. Velvetta cheese, cut in small pieces
1 stick oleo



Directions:
Directions:
Brown onion and pepper in oleo. Add everything else except potatoes. Drain potatoes and pour in large baking dish. Pour cheese sauce over potatoes and gently blend in with potatoes. Bake at 350 degrees until bubbly, about 20 to 30 minutes.
