2 (10 oz) frozen Broccoli Spears or 1 Bunch
3 Chicken Breasts, halved & cooked
1/4 C butter or Margarine
6 T All-purpose Flour
2 C Chicken broth
1/2 C whipping Cream
3 T dry, white wine
1/2 C Parmesan cheese, grated

Cook Chicken in microwave using 2+ cups of water, saving broth.

Steam/ Cook / Microwave broccoli. Melt butter in pan on stove. Blend in flour, 1/2 t salt and dash of pepper. Add chicken broth; cook and stir (I whisk constantly) till mixture thickens and bubbles. Take off the heat. Stir in cream and wine.

Place broccoli crosswise in 12 x 7 1/2 x 2 in. baking dish. Pour 1/2 the sauce over the broccoli. Top with chicken (I break the chicken into smaller pieces). To remaining sauce, add some cheese. Pour over the chicken. Then sprinkle the entire dish with remaining Parmesan cheese.

Bake at 350 for 20 min. or until heated through. Then broil just till sauce is golden brown, about 5 min.

The recipe can be made beforehand, even a day. Just cover and leave in refrigerator until ready to bake. I will double the recipe to a group of 7 or more and bake in same size (large) glass baking dish. This can stand out of the oven for about 20 minutes (covered) before serving. This is one of my favorites! And, also great for leftover holiday turkey.
