6 lb. sweet potatoes
1 stick unsalted butter,melted
c. heavy cream, warmed
2 T. maple syrup
1 t. salt
t. black pepper

Directions:
Directions:
Preheat oven to 400 degrees. Prick each potato twice with a fork & bake in foil-lined shallow pan, about 1 hour. Cool. Cut potatoes in half and scoop out flesh into large bowl. Mash with potato masher. Stir in butter, cream, syrup, salt & pepper.
