12 med sz new potatoes, with skin, quartered
2 whole heads of garlic, cloves broken apart into sections, peeled and left whole.
6 bags of shallots, peeled and broken apart into sections, left whole. Very large ones cut in half
Salt and pepper
1 T Thyme, to taste

Place EVOO in baking dish to generously coat,

Scatter quartered potatoes, shallots and garlic cloves into baking dish.

Season with salt and pepper and thyme
Bake at 350º until browned turning occasionally
