8 slices pre-cooked bacon, rough chopped
8 3/4 inch slices baguettes, cut on bias
olive oil for brushing
Approx. 1 c sliced grape tomatoes
Approx. 2/3 c crumbled blue cheese

Directions:
Turn on the oven onto the broiler setting, leave the door open just a little bit, and then slice the baguette into 1 inch thick slices on a bias. Put the slices of bread on a backing tray brush both sides with a little olive oil.
Pop the tray onto the top rack of the oven to start toasting the first side. Keep eye on them and, when the first side is lightly browned, flip them over to toast the other side.
Meanwhile, toss the slices tomatoes, chopped bacon and blue cheese together in a mixing bowl.
When the bread is nicely toasted, pull it out of the oven and carefully top each slice with tomato, blue cheese and bacon mixture. Pop those back under the broiler just long enough for the cheese to melt a bit and they're ready to serve.
